This originated in northern England, most commonly for afternoon tea sandwiches. Uses strong cheddar and Red Leicester cheeses. Also has recipe for Coronation chicken, which uses poached chicken breast, mango chutney, dried apricots, watercress, and curry paste or powder.

Uses grated Cheddar, grated carrots, mayonnaise and butter, prepared mustard, and hot sauce. Optionally, finely diced pimento peppers may be added.

For finger sandwiches, works well with fruited bread. Uses cream cheese, grated cheddar cheese, apricot preserves, orange marmalade, toasted pecans, and golden raisins.
